Kale in our garden |
Interesting to see a rise in the popularity of kale in the vegetable ranks (
Lowly kale has its moment, by Kristin Tillotson, StarTribune). Not only doe s it have a wide range of uses, it also is a great source of vitamins A, C, K and B6, and is also high in iron, calcium and folate.
We've come to enjoy kale as a valued member of our garden. It grows easily and continues to grow after leafs are taken for consumption.
It is great in stir fry and has recently become popular when baked in olive oil and used as kale chips.
